Carya cordiformis
These are the most northern wild member of the pecan family. Called Bitternut for a reason as they have a strong bitter flavour, yet are known to produce a wonderful oil that is comparable in quality to olive. Distinct bright yellow buds form in the fall and delight the subtle senses of the plant enthusiast all winter.
